Where to Eat in Tempe, Arizona

What makes Tempe, Arizona, a great destination for good eatin’? This college town is home to the main campus of Arizona State University. And as you’d expect, thousands of students live here in constant need of snacks and caffeine. Tempe is situated in the core of the Phoenix metro area, which means there are plenty of older constructions with inexpensive rents that independent bars, coffee shops, or restaurants can afford. A handful of regional chain restaurants like Cornish Pasty or Pita Jungle had their start here before branching out to other cities. And Tempe sits at the gateway of the East Valley’s pan-Asian immigrant community. The city of Houston on the Gulf Coast of Texas is tightly intertwined with the three years I was able to spend living and working in Spain. As a resident of Texas, I was required to make the journey to the Spanish consulate in Houston to formally submit my application for a visa that would let me live in the country during the upcoming school year. But because I wasn’t able to renew my legal status during the summers I spent back home in Dallas, I had to return to Houston not once, but twice, to do the same thing, all over again. Safe to say, I got to know the Megabus route and the Hostelling International hostel fairly well. A Weekend of Eating through Bend, Oregon

Now that I’m living in Phoenix, Arizona, it’s so much easier to visit the almost infinite array of cities, small towns, national parks, and hiking opportunities that America’s Mountain West has to offer. I’m just a 3 1/2 hour drive from the Grand Canyon, a 4 1/2 hour trip from Las Vegas, and half a day’s drive from the wonders of southern Utah. Phoenix just so happens to have a direct flight to Redmond, Oregon—not too far from Bend, a central Oregon city tucked inside a meander (or “bend”) of the Deschutes River. My best friend and roommate from college, Jonathan, moved to Bend last year around the same time I moved out to Arizona, but since we had both taught English overseas, we hadn’t seen each other since graduating from college. Seeing D.C. Through a Local’s Eyes

Earlier this spring, right around the time I was grudgingly turning my apartment’s A/C back on in hot, hot Phoenix, I got to escape a busy season at work for an extended weekend in chillier Washington, D.C. Adams-Morgan I had already visited my nation’s capital five years earlier, getting to check off the Senate galleries, the Supreme Court, all the Smithsonian museums, and a hostel-sponsored pub crawl in Georgetown. So I wasn’t necessarily returning to do touristy things. Instead, I got to reconnect with one of the best American friends I made when I lived in Santiago de Compostela, Spain —Priyanka—and I got to see this exciting city through the eyes of somebody who has made the city her home. Artichokes When I visited the gorgeous city of Girona just north of Barcelona two Junes ago, I came into town expecting to stay just two nights before returning back to BCN and from there to Santiago. No, this isn’t one of those cliché “I just had to extend my stay!” posts—I literally thought I had only booked two nights in my hostel…but come to find out, I had actually booked (and pre-paid for) three! Mar de Lira beach It’s not every day you come across a deserted beach that literally stretches for miles beneath a deep blue sky. Yet that’s exactly what happened to me one warm, sunny Saturday in April while exploring the far western reaches of Galicia in northwest Spain. Gorse-covered hillside The town of Carnota (really just a collection of rural houses and small family farms) stretches across a flat tract of Galicia’s Atlantic coastline, tucked away in a bend of the Ría de Corcubión —one of many inlets of the sea that extend like fingers into the mainland. Betanzos, Spain: My New Favorite Galician Village

As I headed back home to Santiago de Compostela after spending Good Friday 2015 in Ferrol , I took a cross between a pitstop and a daytrip in the coastal village of Betanzos, one of the hidden treasures of northwest Spain. Santiago will always be first in my heart, but Betanzos quickly won me over as my new favorite village in Galicia. The Saturday Morning Market of Arles, France

Arles holds a special place in my memory, not only because this southern French city guards a dazzling treasure trove of Roman monuments, but also because twice a week it puts on a huge show honoring local products and individual shopkeepers: Le Marché d’Arles . When my travel buddy, Melissa, and I visited Arles in February , we made sure to time our visit on a Saturday so as to coincide with the city’s huge market, which combines what we would call flea markets and farmers markets in the States. This blog post has been literally years in the making. Although I’ve happily moved back home to Texas, the city of Santiago de Compostela in far northwestern Spain gave me two of the best years of my life. Despite what many Spaniards may tell you, the food here is not spicy at all. But that hardly means Spanish cuisine is boring! It can often be really intimidating to visit a new country, especially if you don’t speak the language, aren’t acquainted with cultural habits and customs, or aren’t familiar with the local cuisine apart from one or two famous dishes. The region of Galicia in the northwest part of Spain churns out the best food in the entire country. Give me some Galician food any day over expensive Basque pintxos , refined Catalan cuisine, or the famine food of the central meseta . I realize I’ve probably offended just about everybody, but exaggerations aside, but Galicia undeniably occupies a unique place on the Iberian peninsula that has allowed a rich cuisine to develop over the centuries. Bountiful seafood arrives inland from the region’s long, rugged coast; everything from corn to peppers to greens grow in a fertile, rain-blessed interior; and dairy cows stay happy with the mild Galician climate. Edible Creativity: Santiago de Compostela’s Tapas Competition

This weekend, Santiago de Compostela’s seventh annual  concurso de tapas  or  tapas competition  came to an end after half a month of exciting bites served on black slate tablets. I was disappointed that it was over, but my gut and my wallet were relieved. Organized by Santiago’s association of hotels and restaurants, it was a clever way to stimulate the local economy as it enters low season (and as the rain begins to keep folks at home). For a flat price of 2€, you could go into any participating café, bar, or restaurant and order their  tapa del concurso —which made it a great way to explore higher-end restaurants that otherwise might be out of your budget. Padrón, Spain: Peppers, Pilgrims, & Poets

Everyday on the way to and from school , I pass through the town of Padrón,  situated about halfway between Santiago de Compostela where I live and Boiro (on the coast) where I work . Just barely inland, Padrón straddles the Sar River before it empties into the estuary called the Ría de Arousa. Sar River A small but proud village of almost 9,000, Padrón dates back to Roman times when it was known as Iria Flavia (which is still the name of a parish to the north of the city center). Today, it’s known for producing peppers of the same name, for being a major stop along the Camino de Santiago, and for being home to two significant poets in the Galician language. 4 Reasons Why I Love Galicia in November

While there’s probably no one here in Galicia who is excited for the changing of the seasons and all of the miserable rain and bone-chilling cold they bring, there’s something really special about November here in northwest Spain that makes me really look forward to the month. It may not replace that warm fuzzy feeling I get from spending Thanksgiving with the family (and Mom’s cooking!), but Galicia in November is still a festive month that makes fall a wonderful time in this part of the country. 1) All Saints’ Day View this post on Instagram Huesos de Santos—"Saints' Bones" are a typical Spanish sweet on Nov 1st, All Saints' Day where Spaniards remember lost loved ones and bring flowers to their graves.
